Biography

Rupert Spies is a senior lecturer emeritus at the Cornell Peter and Stephanie Nolan School of Hotel Administration. He taught undergraduate and graduate courses in restaurant management; culinary theory and practice; catering and special events management; multi-unit restaurant growth strategy; and restaurant and hotel supply chain management. He also taught a seminar entitled, Culture and Cuisines.

Before teaching at Cornell, Spies worked as a chef and manager in numerous food service businesses throughout Germany, the Netherlands, and the United States, ranging from a Michelin Star restaurant to Business and Industry Food Service Operations.

Spies studied at the Fachhochshule fuer Wirtschaft (University of Applied Sciences - Business); the Technical University in Berlin Germany (Food Chemistry, Government and Education), and at Cornell University (Fulbright Scholarship). He has lectured in Canada, Cyprus, Germany, Japan, and Switzerland. His research interests are international multi-unit restaurant management; controlled ecological life support systems for space exploration; and the catering industry.

Spies has also provided consulting services to international educational institutions, multi-unit restaurant companies, international hotel companies, food supply companies, not-for-profit enterprises, and international financial services companies on food service operations related issues.
