Cornell student-run restaurant begins second semester of operation

Establishment at Statler, the student-run restaurant at the Cornell School of Hotel Administration, will open for the spring semester on Monday, February 18, 2013, at 5:45 p.m. The restaurant, which launched in fall 2012, is run by students in the school's Restaurant Management course and is open to the public.

"Establishment at Statler is a living, breathing display of our talented students," said Alex Susskind, associate professor of food and beverage management, who teaches the class. "The restaurant gives students the opportunity to combine their management, service, and creative skills to create a unique dining experience for guests."

A year before opening the restaurant, students began with a clean slate, researching and developing a restaurant concept that would appeal to the greater Cornell community and provide future classes the opportunity to operate and staff their own restaurant each semester. The 120 students in the class are responsible for all aspects of managing the restaurant as well as performing line work and other support roles. Every night a new group of students serves as employees.

Establishment at Statler is located in the North Terrace Dining Room on the ground floor of the Statler Hotel. The restaurant is open Monday through Thursday, 5:45–8:00 p.m., while classes are in session. Visit to make reservations. Reservations are strongly recommended.
